Rice with milk

loved by children and adults alike, in the Pellegrino household it is now one of my father Pietro’s favourite desserts, which he asks for to pamper himself on cold winter evenings, even as a substitute for an evening meal.
ingredients for 4 people
1 litre whole milk
300 g Carnaroli rice
150 g sugar
½ vanilla pod
1 lemon zest
Salt to taste
Unsweetened cocoa powder to taste
Ground cinnamon to taste
preparation
Heat the milk in a saucepan. Using a small knife, cut open the vanilla pod, remove the seeds and add them to the milk. Add the zest of a washed lemon, the caster sugar, and a pinch of salt. Stir well to blend all the flavours.
Bring the milk to a simmer, then add the rice and cook over low heat for about 30 minutes, stirring occasionally. If it becomes too dry, add more hot milk. At the end of the preparation, the rice should have a rather creamy consistency. When the rice is cooked, remove the lemon zest.
Then transfer the rice to single-portion bowls and, using a sieve, sprinkle with cinnamon or cocoa powder, depending on your preference.
